Coffee does not exist in nature in the form that we normally buy it. Coffee is prepared from the roasted seeds of the coffee plant. These seeds are commonly known as ‘coffee beans,’ even though they are not precisely beans. The green ‘coffee beans’ that are collected from the coffee plantations are sent to places where they are roasted, ground and finely crushed to make coffee powder.

The following are a detail of all the processes that green coffee beans have to go through before they actually become coffee powder. First, they must be picked from plantations. Green coffee beans are most frequently picked by hand by laborers who get paid by the basketful. Since coffee beans are a type of drupe, with fruit flesh directly wrapping the coffee bean, after being gathered the flesh of the coffee bean must be promptly removed by soaking, scouring and mechanically rubbing the bean. The de-fruited coffee bean is then cleansed with water to remove sticking fruit and additional sugars before drying. The green coffee beans are then spread over a large concrete or rock plane, where they are dried by air and sunlight.

The next step in preparation is categorization of the beans by color and size. Discolored, decayed and damaged beans are removed at this point. The roasting process that follows is important in producing an aromatic cup of coffee. When roasted, the green coffee bean expands to nearly twice its initial size, changing in color and density. As the bean takes in heat, the color changes to yellow and then to a light ‘cinnamon’ brown. At this point in the roasting process, the coffee beans will start cracking, quite like popping popcorn. The final product can be crushed into savory coffee powder.

Thus, we see how all the coffee, as we know it today comes actually from green coffee beans.

What Makes Hawaiian Coffee So Special?

Coffee was first introduced to the Islands by Chief Boki, the Governor of Oahu, in 1825. He acquired coffee plants in Rio de Janeiro while aboard a British warship, the H.M.S. Blonde. These first coffee plants were planted in Manoa Valley, on Oahu, where they flourished. Are You Paying Too Much For Gourmet Coffee?

If you are a real coffee drinker and I mean the kind that is willing to pay a lot of money for good coffee do I have something to tell you. You may be over charged for your coffee. For instance, if you were to buy a bag of Starbucks Gourmet Blend from a local Supermarket for $7.99 per 12 oz bag you might not be getting your money?s worth. If you were to pay over $5.00 per 12 oz bag of any coffee at the Supermarket you are paying way too much. Let me explain just why that is.

Most of the Gourmet Coffee at the supermarkets is usually a Gourmet Blend. Blended with what you might ask? Exactly! You have no idea what the blend is. Is it fresh Arabian beans blended with stale French Roast? Could it be Galapagos Island Coffee blended with old dried out Mexican Coffee beans? You can never really tell, but I promise you that if you think for one minute a company won?t try to recoup their loses then you have another thing coming. A Blend Coffee is the perfect way to sell damaged coffee or half stale coffee & half fresh coffee combined with out the customer?s knowledge. I am by no means accusing anyone of doing such a thing, but I know it happens.

I have seen coffee blends sell for as much as $14.95 a 12oz bag. The part that makes me laugh is that you never know how much of the coffee is high-grade and how much is low-grade coffee. Yet people believe it is just as good as the unblended coffee. That is to far from the truth. Let?s take the Kona Blended coffee for instance. Lets say it is a 50% Kona and 50% mixed coffee beans. If you were to taste pure Kona Coffee next to this Blend the pure Kona would standout as the better of the two in smell and taste. How much is Gourmet Blended coffee really worth? There is a market for just about everything these days and blends are no exceptions. Seeing you are probably pay for 50% good coffee and 50% crap then I wouldn?t pay more then 50% of the price for the unblended coffee.

What about coffee that is not blended? It really depends on where you buy it. Supermarkets don?t know what really fresh coffee is, but a private roasting company will. Gourmet Coffee ranges in price from $7.95 a lbs to $48.95 a lbs. Why so much? Because the hard to find and rare coffees like Kona, Jamaican Blue Mountain, and Galapagos Island coffee are in high demand. The higher the demand is for rare coffee the higher the price is as well. I always recommend shopping around, but it can be difficult to find rare coffee. As a coffee roaster I have a hard time locating good Kona coffee beans, and due to the hurricanes the Jamaican crop has been scarce too. The cost associated with Kona and Jamaican coffee is expected to go up even more this year. Just like the inflated price of gasoline we may all have to pay a high price for great coffee.

For The Perfect Cup Of Coffee Start With Gourmet Beans

How does one brew the perfect cup of coffee?

There are several different brewing methods used through out the world and every avid coffee drinker has their own preference. But the one thing that they all agree on is freshly grinding the coffee beans daily. This is something that they believe in deeply and take to heart. Even the average coffee drinker will be a convert to this after having just one cup of coffee from freshly ground beans. With this in mind, every home should have a good quality coffee grinder.

The next logical question would be, what is a quality coffee grinder?

Well, there are two basic types of grinders, burr grinders and blade grinders. The burr grinders use plates with gears on them, otherwise known as burrs. One plate turns while the other stays still which causes the moving plate to grind the beans against the stationary plate. Blade grinders, on the other hand, use razor sharp blades that spin, grinding the beans in the process. When choosing between these two, keep in mind that heat and uniformity can have an effect on the finished coffee.

No matter what type of grinder you choose, a certain amount of heat is produced. Faster grinders are time savers but they produce more heat, and this does cause a certain amount of damage to the beans. Also, the length of time needed to make finer grounds also causes more heat, thus more damage.

Another thing to take into consideration when producing a great cup of coffee is the uniformity of the grounds. Coffee should be ground evenly through out. This is important because when the water passes over the coffee grinds it only has a small amount of time to take in the flavor of the coffee. When beans are poorly ground and not as uniform, it is harder for proper brewing to take place.

A low speed burr grinder does not produce as much heat, causing less damage to the coffee. Also, unlike the blade grinder, it provides a more uniformly ground bean which allows for better brewing. It is for these reasons that the burr grinder would be a better choice over the blade grinder. This type of grinder can run as much as several hundred dollars, but there are models available to fit into any budget.

For those who do not enjoy the flavor and aroma of a great cup of coffee, this may seem like an extravagant purchase and colossal waste of money and time. After all, there are many different already ground coffees on the market, easily purchased at local grocery stores. But for the coffee enthusiast who has a heightened sense of taste and smell, these prepackaged products just do not do not measure up. Therefore, this is a wise investment that will bring years of enjoyment. Let’s face it; there is no better way to start any morning than with the perfect cup of Joe.

Italians are unique to the world when it comes to coffee. They aren?t content to just drink it the old ordinary way. They love it so much that they also enjoy tinkering with the recipe.

It started with the unique thick coffee invention known as espresso. Later, Italians came up with cappuccino, which is similar to espresso but not as heavy, yet loaded with power. Eventually cappuccino?s flavor spawned other coffee conceptions, such as desserts (you ever have cappuccino ice cream?), frappuccino and others. But cappuccino is quite a popular worldwide drink itself.

Cappuccino is normally made using the rich and heavy espresso as its foundation. As a rule then, milk that has been steamed is added to the espresso, and finally a lovely foamy cream tops off the mixture. Naturally there are several deviations from this idea, such as equal parts of all 3, or a huge amount of foam to tower over the cup, or a smaller amount of milk for a stronger cappuccino.

In America, we usually will drink cappuccino after dinner, as a coffee substitute. But in Italy, it is often enjoyed during the breakfast hour. When it is made strong, it can really wake you up for the day ahead. The cappuccino Americans enjoy is not quite so strong, rich or bold, but still quiet pleasant.

Nowadays there are many coffeehouses that will serve cappuccino drinks at anytime of the day. Also cappuccino can be enjoyed at many of the finer restaurants, whether Italian or not. Many places such as bookstores that feature caf?s serve many varieties of cappuccino as well as coffee. For sure, cappuccino has become a stronghold among the coffee drinkers of the world.

And I must admit, I love cappuccino far more than coffee. It is richer, has more flavor, and I just love to hear that unique sputtering sound of when a cappuccino maker is adding the frothy cream to the top. It makes me feel that the restaurant is making something special just for me.

And cappuccino doesn?t stop with its drink in the cup. You can get cappuccino ice cream as mentioned earlier, and cappuccino cheesecake and cappuccino cookies. There is no limit to the variations of delicacies made with the cappuccino flavor and texture.

The Italians have come a long way with improving on the tropical born drink known as coffee. And as cappuccino testing continues, there will be even more wonderful versions of this lovely drink to come.
